Protected Meat Products from European Regions: PDO and Geo-Designations

Experience the culinary journey of authentic, well-established Italian prosciutto under the regulations of the Common Agricultural Policy of the European Union (EU). This policy provides protection and recognition for certain traditional specialties through a Protected Designation of Origin (PDO) - known as DOP in Italian - and other geographical designations. While some regions have their own PDO, not all require free-range pigs for their prosciutto production.

Indulge in the simple yet flavorful Italian prosciutto, which can be enjoyed mainly alone. However, it's important to note that the term "prosciutto" alone is not protected. The two most famous varieties of Italian prosciutto crudo are prosciutto crudo di Parma, hailing from Parma, and prosciutto crudo di San Daniele from San Daniele del Friuli in the Friuli-Venezia Giulia region. The prosciutto di Parma boasts a slightly nutty flavor thanks to the addition of Parmesan whey to the pigs' diet, while the prosciutto di San Daniele is known for its darker color and sweeter taste.

To maintain the authenticity and quality of these prosciutto varieties, only salt is allowed as an additive per the product regulations, prohibiting commonly used additives like nitrite and nitrate. Keep in mind that both the European PDO and Protected Geographical Indication (PGI) apply to several prosciutto types in Italy, each offering a unique and distinct color, flavor, and texture. Discover the delicious taste of authentic, protected Italian prosciutto today.
